Breakfast Boy

This morning David got to be my breakfast (er, brunch…ahem) helper.  He chose to make pancakes.  This is the first time I’ve tried to just cook with one, and it was much better than the general mayhem that results when all 3 are in the kitchen trying to stir and measure.  It was a lot of fun and Esther spent the whole time on the fringes watching enviously and talking about when it would be her turn.  :)

The recipe came from here, and is ABSOLUTELY THE BEST basic pancake recipe I’ve ever found.  At some point I’m going to try subbing in some whole wheat flour and bran or something and see what happens, but for now, they’re great the way they are, and hey….probably a whole lot healthier than Bisquick.  Suffice it to say that I am not a pancake fan, but I can’t resist these ones.  They don’t even need butter on them.  Anyways…..

I left for a minute to change Luke’s diaper and David had a burnt thumb and turned pancakes when I got back.  :)

Cleanup is fun…..

  • What a good idea for them to take turns. You will cherish these photos and memories when they are older! You also get a little help and they learn to work in the kitchen and how to help.

    Ok, there’s a whole 2 pages in the cookbook that explains how they arrived at this recipe and why, but here is the pertinent info: Enjoy! :)

    1 Tbsp lemon juice
    1 1/2 c. milk
    (use 1 1/2 c. buttermilk instead if you have it)
    2 c. flour
    2 Tbsp. sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 large egg
    3 Tbsp. butter, melted and cooled slightly
    1-2 tsp. veg. oil(for cooking)

    Whisk lemon juice and milk together and let sit to thicken while mixing other ingredients. Mix flour, sugar, baking powder, baking soda, and salt in medium bowl to combine.

    Whisk the egg and melted butter into the milk until combined. Make a well in the center of dry ingredients and pour in the milk mixture until just combined with a few lumps remaining(VERY IMPORTANT: DO NOT OVERMIX).

    Cook on oiled skillet over medium heat.

    ***The recipe originally called for 2 cups of milk, but I found that to be too runny.

    I never know when to stop mixing. I know when it ’s overmixed, but not when it’s undermixed….

    Also, did you use buttermilk or the lemon juice trick?

    Looks nummy, and I love that griddle you have. I have been eyeing them for the gas stove…I think they probably make a much nicer “cake” than an electric griddle. I’m also trying to fine THE perfect waffle batter.

    And I LOVE cookbooks that tell you “why” they do what they do, and why the recipe is the way it is. Makes you a better cook IMO.

    That was my long version of “Thanks for posting the recipe.” hehe

    Aunt JR – I’ve always done the lemon juice thing, since buttermilk isn’t something I commonly buy…and about the griddle – I’m starting to really love cast iron. It’s cheap, heavy duty, and becomes more non-sticking the more you use it. I would definitely recommend it…also, my griddle is ridged on the other side for “grilling” steaks or pressing panini, or whatever. :)

    I love our cast iron pan, it rocks….after we finally got all the rust off of it. LOL Steak is the best when seared on that thing. Mmm, mmmm, MMMM!
