		<description>I love our cast iron pan, it rocks....after we finally got all the rust off of it.  LOL  Steak is the best when seared on that thing.  Mmm, mmmm, MMMM!</description>

		<description>Aunt JR - I&#039;ve always done the lemon juice thing, since buttermilk isn&#039;t something I commonly buy...and about the griddle - I&#039;m starting to really love cast iron.  It&#039;s cheap, heavy duty, and becomes more non-sticking the more you use it.  I would definitely recommend it...also, my griddle is ridged on the other side for &quot;grilling&quot; steaks or pressing panini, or whatever.  :)</description>

Looks nummy, and I love that griddle you have.  I have been eyeing them for the gas stove...I think they probably make a much nicer &quot;cake&quot; than an electric griddle.  I&#039;m also trying to fine THE perfect waffle batter.

And I LOVE cookbooks that tell you &quot;why&quot; they do what they do, and why the recipe is the way it is.  Makes you a better cook IMO.

		<description>Ok, there&#039;s a whole 2 pages in the cookbook that explains how they arrived at this recipe and why, but here is the pertinent info:  Enjoy!  :)

1 Tbsp lemon juice
1 1/2 c. milk
(use 1 1/2 c. buttermilk instead if you have it)
2 c. flour
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 large egg
3 Tbsp. butter, melted and cooled slightly
1-2 tsp. veg. oil(for cooking)

Whisk lemon juice and milk together and let sit to thicken while mixing other ingredients.  Mix flour, sugar, baking powder, baking soda, and salt in medium bowl to combine.

Whisk the egg and melted butter into the milk until combined.  Make a well in the center of dry ingredients and pour in the milk mixture until just combined with a few lumps remaining(VERY IMPORTANT: DO NOT OVERMIX).

Cook on oiled skillet over medium heat.

***The recipe originally called for 2 cups of milk, but I found that to be too runny.</description>
